This scale ranks 110 peppers on their Scoville Heat Units (SHU), a measurement of the capsaicin in each pepper, to determine which ones are the hottest and which are on the sweeter side. Habaneros top out at 577,000 on the SHU scale, and there are plenty of varieties to choose from. But there are another 20 peppers that are even hotter, shown with a large jump in the heat scale as the next hottest pepper’s SHU nearly doubles that of the spiciest habanero.
The hottest pepper on the chart, officially, is the Carolina Reaper with a SHU of 2.2 million. It won the Guinness World Record in 2018, although it could have some competition from Pepper X which has an unofficial SHU of 3.18 million. It's still awaiting verification from Guinness World Records to be the official hottest pepper.
